In general, we don’t eat a lot of salad – to us, there’s something inherently “blah” about the thought of eating a salad as a main course. Maybe it’s because eating salad is associated with dieting and we hate dieting…or maybe it’s because there are so many more exciting things to eat… BUT, on a hot day, or on the rare occasion that we do want salad, this is what we make.

I enjoy salads a lot, but the only downside is being hungry a couple hours later! But you added nuts and cheese, so I’m sure that held you over longer. It looks so healthy and nutritious! Yum.
