Spinach Pasta with Shrimp, Scallops, and Bacon

We have a trove of good seafood in our freezer and the other night, we were trying to think of a good use for some of it. We had recently been to Whole Foods, where we found a bag of spinach spaghetti - whole wheat spaghetti that has spinach mixed in to the pasta dough. One [...]

Spanish Mackerel and a sandy Dog

We had the luxury of spending last weekend at the beach, which is something we highly recommend to all of our readers. One of the highlights of a beach trip is the fresh seafood store, and this time we decided to try something new. Looking at all of the great-looking shrimp, scallop, crab, fish, etc., [...]

Eggplant Parmesan

We made this super fresh and as light as possible. Homemade tomato sauce, eggplant, cheese – verrrry good. Obviously, this is vegetarian….but don’t associate that with “boring,” because it isn’t. Try it, and let us know what you think!
