1 large white sweet potato
1 gala apple, peeled sliced
2 tablespoons clarified butter
1/2 teaspoon cinnamon
2 tablespoons milk
2 tablespoons butter
Salt and pepper, to taste
1 tablespoon brown sugar (optional)

Peel the sweet potato and cut into cubes. Boil until the potato is ready, approximately 10-14 minutes. When the potato is finished, drain the water and keep the potato cubes in the same pot. In the meantime, heat the butter over medium heat in a skillet and add the apples. In this recipe, you want to caramelize the apples, so leave them all on one side for about 4-5 minutes, but watch them! Once they get a light caramelized coating, flip them over and do the same to second side.
Once the apples are caramelized, add the apples and the rest of the ingredients to the pot with the potatoes. Mash together with a mashing tool, adding more milk if necessary for the consistency. Serve immediately (maybe with some pan-fried lake trout) and ENJOY!
