This has become our new favorite summer side dish. Fried okra is delicious, of course, but roasting this veggie brings out its natural goodness.

1 pound okra $2.00
2 tablespoons olive oil $0.20
salt and pepper to taste $free-ish
Total Cost = $2.20
Lay okra on ungreased cookie sheet, drizzle with olive oil, and sprinkle with salt and pepper. Roast at 350 degrees for 20 minutes. ENJOY!
