These look like money bags…and they are full of green stuff. Money bags for frugal folks! They also happen to be delicious, cute, and fun to make.

2 sheets puff pastry dough* $2.oo
1/4 tablespoon olive oil $0.03
1/8 medium onion, chopped $0.05
1/2 clove garlic, minced $0.05
1/4 package frozen spinach, thawed and drained $0.30
3/4 Tablespoon oregano, chopped $0.08
3/4 Tablespoon parsley, chopped $0.08
1/4 cup feta cheese, crumbled $0.50
1/2 Tablespoon lemon juice $0.05
1 egg $0.12
Salt and pepper to taste $free-ish
Total Cost= $3.16
Preheat oven to 375 degrees. Heat the olive oil in a medium skillet over medium heat, and saute the onions until they are tender. Add the garlic and saute for another minute.
Add the spinach and cook for 5 minutes. Add the herbs, cheese, and lemon juice. Mix well. Transfer mixture to a bowl.
Whisk the egg and add all but one Tablespoon of it to the spinach mixture, mixing well.
Roll out the puff pastry dough. Cut each sheet of dough into small 2 to 3 inch squares. Spoon a small amount (1 teaspoon, maybe) into the center of each square. Bring the corners of the square together and pinch/twist so they will stay.
Place the bundles/money bags on a baking sheet. Use the remaining 1 T of egg to brush the tops of the bundles. Bake for about 20-25 minutes or until golden on the top.
