These make for a simple and delicious summertime appetizer. Even though they’re light, they’re not a whimpy little start to a meal – this would be great to kick off anything from fish to steak.

1/2 crusty baguette $1.00
1 bunch baby roma tomatoes $1.99
8-10 leaves fresh basil $free (from your herb garden!)
2 tablespoons of olive oil $0.20
3 ounces of fresh mozzarella cheese $1.00
Salt and pepper $free (ish)
Total Cost: $4.19
Preheat the oven to 350 degrees.
Thinly slice the baguette. Slice the tomatoes into small discs and gently chop the basil. Drizzle the olive oil over the bread. In this order, put the tomato slices, basil, and then cheese on each piece of bread. Bake for 6-8 minutes, or until the cheese is melted and looking delicious. Crack some fresh salt and pepper over each one, but don’t go overboard. ENJOY!
