This meal is healthy, healthy, healthy, but it’s also GOOD, GOOD, GOOD. As it turns out, couscous is remarkably difficult to photograph, at least for me. It doesn’t look all that great in these pictures, maybe, but we promise…it’s so tasty.
3/4 cup couscous *
2 tablespoons olive oil
1 clove fresh garlic, minced
4 ounces frozen spinach, boiled and drained well
1/4 cup sun-dried tomatoes, diced
1/4 cup black olives, diced (kalamata olives preferred)
1/8 cup red onion, diced
1/2 teaspoon kosher salt
***Lemon Vinaigrette:***
1/8 cup lemon juice
1/8 cup extra virgin olive oil
kosher salt to taste
sugar to taste
Heat olive oil in a pot, add garlic and heat for 30 seconds while stirring. Add boiled/drained spinach and stir together. Let cook together for about 1 minute. Remove from heat – put this spinach/garlic mixture in a large bowl.
Cook couscous according to package directions. Add to bowl.
While couscous is cooking, make vinaigrette - whisk together olive oil and lemon juice, add sugar and kosher salt to taste.
Add all remaining ingredients including vinaigrette and mix well.
We like to eat this hot..but you can also chill it and serve cold.
