This is delicious and SO much better than canned tomatoes or canned sauce. We use this sauce (with basil) on our eggplant parmesan, and on our pizzas (the ones that have sauce, at least!). Try it out and see what you think!
1-2 large tomatoes, diced $1.20
1/4 teaspoon sea salt $free-ish
1/4 teaspoon ground pepper $free-ish
1 clove garlic, minced $0.10
2 tablespoons good olive oil $0.50
Total Cost = $1.80
In a saucepan over medium heat, cook the tomatoes until they reach a boil and then become soft, about 8-10 minutes. Lower heat and add the salt, pepper, garlic, and olive oil. Cook another 3-5 minutes to allow the flavors to combine. Turn heat off. Leave partially covered (letting the sauce cool slightly) until you are ready to use the sauce.
